Tonight, with a little help from a friend who is a fantastic cook...I managed to use up some garden tidbits and leftovers. I am so glad to have friends that cook and can help this poor gal out in the kitchen, even if it is through a post on FB. It was quick and easy and the whole family, with the exception of the 7 year old picky eater, all enjoyed a great chicken bagel pizza.
First, I took some tomatoes, peppers (bell, banana and some kind of HOT) and onions and drizzled them with olive oil in a pan. Sprinkled on some seasoning and put them in the oven at 400 for about 20 minutes or so, til they looked like they were ready. I took the leftover marinara sauce from last night and smoothed it over those thin bagels we had not used to make sandwiches with then added the tomatoes, peppers and onions, tossed on the leftover cut up into bits chicken and a little paremsan and cheddar cheeses on top. Baked those til the cheese melted and TA-DA, DINNER!
That picky 7 year old had some of the chicken, leftover green beans and mac n cheese from Grandma's casserole Sunday night. Perfect! We all ate leftovers and liked it! No food wasted. :)
